Christmas Funfetti Cake Batter Truffles


One of my favorite things to do around Christmas time is bake a whole ton of new things. I was all raring to go when I got home this week, only to find out that my mom had already done most of the baking that needed to be done!

I was not impressed...

Regardless, I set out to try a few new recipes anyway. Even though we always end up with tons of leftover sweets after Christmas, there are tons of family get-togethers and events that you can bring sweets to, so I figure more isn't such a bad thing.



These little truffles are very sweet and very rich but soooo super tasty. They centers kind of remind me of a combination of cake batter and the pre-made Pilsbury cookie dough you buy in stores.

These would be a great addition to ay holiday dessert tray you may need to contribute to, and they are really quick and easy to whip up. Definitely recommended for anyone with a real sweet tooth!


Christmas Funfetti Cake Batter Truffles
Prep Time: 10mins       Chill Time: 20-25mins         Yields: 24 truffles

Ingredients:
1 cup white cake mix
1/2 cup all purpose flour
1/2 cup granulated sugar
1/4 cup butter, melted
1/2 tsp vanilla
2 Tbsps milk
1 Tbsp christmas sprinkles, more for decoration
2 cups white chocolate chips, melted

Directions:
1) In a large bowl, mix together the cake mix, flour, and sugar. Add in melted butter, vanilla and milk and stir until completely combined. Add sprinkles and stir until evenly dispersed throughout mixture.
2) Line a cookie sheet with wax paper. Form mixture into small, equal sized balls and place on cookie sheet. Refrigerate for 20-25 minutes.
3) Just before the centers are done chilling, melt the chocolate chips in a microwave safe bowl until completely melted and smooth.
4) One at a time, place the centers in the melted chocolate and coat completely. Use a fork to lift the truffles out, tapping to remove excess chocolate. Sprinkle with extra christmas sprinkles as desired. Repeat until all centers have been coated in chocolate.
5) Return the truffles to the fridge to harden the chocolate. Truffles should be stored in the refrigerator in an airtight container.
