Giant Reese's Pieces Cookie for One
It's The Baking Bluenoser's 2 year anniversary!! Thank you to everyone that has been supporting me from the beginning, and to everyone who has been supportive along the way. I love to bake & cook, and blogging is just my way to share all the joy that it brings me with all of you.
Obviously, to celebrate this two year birthday mark, I made something that I love.
HUGE PEANUT BUTTER COOKIES!
These cookies remind me a lot of the cookies they used to sell in my cafeteria. They were literally called "Big Cookies" and they were just these huge, warm, gooey chocolate chips cookies that sold like hot cakes as soon as the lunch bell rang. You had to run to the cafeteria if you wanted any chance of getting one.
Then the school went all "healthy" and banned the Big Cookies...such a sad day...
Anyway, these cookies are pretty much just like that except with peanut butter and reese pieces. They are super gooey and delicious and just amazing. You might feel like crap after eating a whole one because they are pretty much the size of your face, but no one here is judging. Enjoy as much cookie as you want!

Giant Reese's Pieces Cookie for One
Bake Time: 18mins Yields: 1 big cookie
Ingredients:
2 Tbsps unsalted butter, softened
2 Tbsps granulated sugar
2 Tbsps packed brown sugar
2 Tbsps beaten egg
1/2 tsp vanilla extract
2 Tbsps smooth peanut butter
1/2 cup flour
1/4 tsp baking soda
1/4 tsp salt
1/4 cup reese's pieces
1/4 cup semisweet chocolate chips
Directions:
1) Preheat oven to 350F. Spray a baking sheet with nonstick cooking spray. Set aside.
2) In a large mixing bowl, beat together butter and both sugars until light and fluffy. Add egg and stir until combined. Add vanilla and peanut butter and stir until smooth.
3) Add flour, baking soda, and salt and mix until combined. Add reese's pieces and chocolate chips and mix until evenly distributed. At this point the dough will be fairly sticky.
4) Scrape the dough into a large ball and put it onto the center of the pan. Make sure the dough is fairly tall and round. Push a few extra reese's pieces into the top of the cookie, as this will help to hold it's shape while it bakes.
5) Bake cookie for 18 minutes, until the edges are lightly browned. Remove cookie from oven and let cool on the baking sheet for 10 minutes. Remove from pan and enjoy!
