Baked Ziti with Turkey Sausage
Wow, it has been a LONG time since I have posted anything! I had a lovely vacation and was enjoying my time away from everything.
I got to spend over a week at my cottage on Prince Edward Island, then the Boyfriend and I drove home, only to turn right around again and drive out to the Cape Breton Highlands National Park for a few days of camping and hiking. I had never been to CB before, but I absolutely fell in love with the place and can't wait until the next time I am up there. The highlands are beautiful and the views are magnificent! If you ever get the chance to go, I highly recommend it!
This summer has not been the most healthy for me, and I have been indulging more often than not. I've decided to get back on the healthy-train when I return to Kingston (which is fast approaching, in less than 2 weeks :( !), but to get a jump start I have this healthy pasta dish to share with you.
This is a WeightWatchers recipe so you know it's gonna be healthy :) Enjoy!
Baked Ziti with Turkey Sausage
Cook Time: 35 mins Yields 8 servings (WW: 8pts/serving)
Ingredients:
3/4 lb uncooked turkey sausage, casings removed
1 medium onion, chopped
28-oz can diced tomatoes
10 oz frozen peas, thawed
2 Tbsps canned tomato paste
1 tsp dried oregano
1 tsp dried basil
1/2 tsp dried thyme
1/2 tsp fennel seed
1/2 tsp salt
1/2 tsp ground black pepper
12 oz whole wheat pasta, cooked
6 oz partly-skimmed mozzarella cheese, shredded
Directions:
1) Preheat the oven to 350 F.
2) In a large saucepan over medium high heat, cook the sausage meat until lightly browned and crumbled, about 4 minutes. Drain the fat.
3) Add the onion to the pan and cook for another 3 minutes. Stir in the tomatoes, peas, tomato paste, oregano, basil, thyme, fennel seed, salt and pepper until simmering. Reduce heat and continue cooking, uncovered, for about 5 minutes. Stir often.
4) Add the cooked pasta and half the cheese to the saucepan. Spread the mixture evenly into the pan and top with the remaining cheese.
5) Bake for about 20 minutes, until cheese is bubbly. Remove from oven and let stand for 10 minutes.
