Cookie Dough Brownies


Sometimes I see recipes that look so amazing, and then I make it and only AFTER the fact do I realize just how unhealthy it is. When I saw this recipe I thought, "I LOVE brownies, I LOVE cookie dough...what could POSSIBLY be bad about this dessert??!?!"


True, they do taste delicious, and they're like a dream for anyone with a major sweet tooth...but this can also be a problem! How are you supposed to resist a dessert that is really two desserts in one? Especially when it makes so many squares. I would definitely suggest cutting these babies small.


These are delicious, fun, and sure to satisfy any sweet tooth craving. Kids and adults alike will enjoy these double-desserts! They're not difficult to make and are not too time-consuming, despite their multiple layers.


Last Month: Double Chocolate Minis

Cookie Dough Brownies
Bake Time: 30mins       Yields 40 squares
Ingredients:
THE BROWNIES
4 eggs
1 cup canola oil
2 cups granulated sugar
2 tsps vanilla extract
1 1/2 cups flour
1/2 cup cocoa
1/2 tsp instant coffee
1/2 tsp salt

THE COOKIE DOUGH
1 cup unsalted butter, softened
1 cup brown sugar, packed
1/2 cup granulated sugar
4 Tbsps milk
2 tsps vanilla extract
2 cups flour
1 cup semisweet chocolate chips

THE CHOCOLATE GLAZE
2 cups milk chocolate chips
2 Tbsps vegetable shortening

Directions:
1) Preheat oven to 350. Grease a 9x13 inch baking pan, set aside.
2) In a large bowl, beat eggs, oil, and sugar until completely combined. Add vanilla extract. In a separate bowl, combine flour, cocoa, instant coffee and salt. Slowly add to egg mixture and mix until combined.
3) Pour brownie batter into prepared baking pan and bake for 30 minutes, or until a toothpick inserted into the centre comes out mostly clean. Let brownies cool completely.
4) To make the filling, cream the butter, and both sugars until they are light and fluffy. Beat in the milk and vanilla, then slowly add the flour, mixing until completely combined. Stir in the chocolate chips. When brownies are completely cooled, spoon cookie dough into pan and press evenly over the top of the brownies. Chill until firm.
5) To make the glaze, put chocolate chips and shortening into a microwave-safe bowl. Heat the chocolate in 30 second increments until completely melted and smooth. Pour over the top of chilled squares and spread evenly. Chill until the chocolate glaze is set. Cut squares and serve.
