I have been sitting here for almost an hour, and have not been able to write a single word..I am having the worst case of writer's block EVER this morning. I feel like nothing super exciting has been going on in my life the last few days. It has just been a blah couple of days.
I had to work this weekend, so sadly I wasn't very productive in the kitchen. I'm going to be working hard throughout this week to get some more things made so I'll have recipes to share with you!
I'll start the week with this recipe, which the boyfriend and I actually made last week for dinner. This recipe was another one of his finds, and it looked too good to pass up. Now that I have had the chance to eat it, I'll tell you first hand, it really IS way too good to pass up and I would recommend it to everyone.
To me, tacos are one of those meals that are so easy and quick to whip up, and they satisfy everyone because you can just put whatever you like on them! This recipe was only slightly more labor intensive than normal tacos, but it was still pretty quick to put together.
The recipe uses pilsbury crescent rolls as the "taco", which gives it a soft-shell taste (I prefer soft shell tacos anyway, so I was pleased). You get the opportunity to put whatever veggies and toppings you want on the inside of the ring, and these "tacos" go great with salsa and sour cream as well!
I loved this meal, and I will definitely be making this again!

Baked Taco Ring
Bake Time: 18-22mins Yields 4 servings
Ingredients: (Add any veggies and toppings you want)
1 lb ground beef
1 package taco seasoning
1 cup water (amount on the seasoning pkg)
2 8oz packages of refrigerated crescent rolls
Chopped lettuce
Diced Tomato
Diced Onion
2 cups shredded cheddar cheese
Salsa
Sour Cream
1) Preheat oven to 375 F.
2) Brown the beef. Drain the fat and add taco seasoning and water. Let simmer until the sauce thickens a little bit.
3) Unroll the crescent roll dough. Place the dough triangles in a circle on an ungreased pizza pan, with the largest part of the triangle facing into the center of the circle. The edges of the triangles should overlap a bit, and there should be a large hole in the middle of the circle.
4) Spoon meat sauce evenly onto the wide ends of the triangles. Fold the points of the triangles over the meat, but leaving the hole in the center.
5) Bake the taco ring for 18-22 minutes, or until golden brown.
6) Prepare your veggies and toppings. When taco ring is done, place veggies and toppings in the center hole. Serve immediately.
