Chicken, Cheese and Broccoli
This weekend, I was back in Kingston for the first time in 2 weeks. It was so nice to see the Boyfriend and spend some quality time together. Even though the weather wasn't great, we had a wonderfully lazy weekend together. Peterborough isn't super far away from Kingston, but it's still difficult getting used to not seeing someone when you're so used to seeing them every day!
I was sad to head back to PTBO today, but I'm looking forward to the next time I'll be back home and hoping the time will pass quickly until then!
Today, I am sharing one of my absolute FAVORITE family recipes of all time. In fact, I would go as far to say that this is my favorite meal ever.
I'm serious. Best. Meal. Ever.
I request this meal every year for my birthday. I get excited when my mom decides to make this for dinner. I was incredibly happy when I finally made this dish for the first time on my own and it turned out SO well!
Cheesy chicken and broccoli goodness...what more could you possibly want?!
Chicken, Cheese and Broccoli
Bake Time: 15 minutes Yields 6 servings
Ingredients:
1/3 cup butter
1/3 cup flour
1 1/2 cups milk
1/2 cup cheddar cheese, cubed
2 cups broccoli, cooked
2 cups chicken, cooked and chopped
1 1/2 cups rice, cooked
Directions:
1) Preheat oven to 350F.
2) In a medium saucepan over medium-high heat, combine butter, flour, and milk to make a white sauce. Mix continuously until melted and smooth. Add cheese and mix until completely melted. Remove from heat.
3) Layer cooked broccoli in the bottom of a 9x13 glass cooking dish. Top with cooked chicken. Pour cheese sauce over top of broccoli and chicken. Bake for 15 minutes, until cheese is hot and bubbly.
4) Remove from oven. Serve immediately over a bed of rice.
