Chocolate Pretzel Bark


 Since I've been back in Kingston, I've been trying to eat healthier. Summer at home was great but it also meant endless supplies of free food, going out for meals with friends and just generally a lot of unhealthy eating habits. I also had a lot of free time on my hands...and free time always leads to bored-snacking.

Does anyone else, besides me, feel the need to constantly snack on anything in sight when they're bored?!



One thing I love about this recipe is that it makes a great snack food, but it isn't overly unhealthy. It combines sweet (dark chocolate/dried cherries) and salty (pistachios/pretzels) for an all-around tasty treat!

This is the perfect choice when you get those late night (or, in my case, mid-afternoon) snack cravings!


Chocolate Pretzel Bark
Prep Time: 7mins     Chill Time: ~20mins     Yields 16-20 pieces    (WW: 5pts/piece)

Ingredients:
12oz semisweet chocolate chips
2 cups salted pretzel sticks
3/4 cup dried cherries, chopped
1/2 cup pistachios, chopped

Directions:
1) Line a 13x9 inch baking dish with wax paper. Set aside.
2) In a microwave-safe bowl, microwave the chocolate chips on high for about 1-2 minutes until smooth. Stir the chocolate chips every 30 seconds.
3) Pour the melted chocolate into the prepared pan. Sprinkle the remaining ingredients evenly overtop of the chocolate and press them into the chocolate.
4) Place mixture in the fridge for approximately 20 minuted, until hardened. Invert the chocolate onto a plate, remove the wax paper, and break the bark into pieces. Store bark in an airtight container in the fridge.
