Triple Chocolate Pudding


I'm in the home stretch now folks. Less than two weeks till I'm back on the east coast and I could not be happier. Sadly, 3 exams still stand in between me and freedom and the pressure is still on. I am hoping that time flies by so that I can finally start my summer vacation!

This past week was super hectic, as the Boyfriend and family were up for his convocation. I was so happy to see him again but it just made me want to be back home even more!



I know it has been a while since I've posted anything but unfortunately, that's how things go during the busy season. Once this craziness is over, I'll be able to post more frequently/regularly.

This recipe is a fairly simple chocolate pudding recipe that is healthy (ish) and delicious! Hopefully you can all enjoy this recipe, and it can hold you over until I have time to post some more delicious goodies!


Lastly, I just wanted to give a shout out to my Dad for Father's Day. My father has always been one of my biggest supporters in everything I do, including this blog. He is always eager to try all the food I make and has given me 100% of his love and support. He gives me the confidence to do things I didn't think or know that I could do, and for that, I am so grateful. I love you Dad! Happy Father's Day :)


Triple Chocolate Pudding
Prep Time: 5mins       Cook Time: 12mins       Yields 8 servings      (WW: 5pts/serving)

Ingredients:
1 (5oz) pkg chocolate instant pudding mix
1 large egg yolk
4 cups low-fat chocolate milk
1 oz semisweet chocolate, chopped
1 tsp vanilla extract
Whipped cream (for topping)
Semisweet chocolate shavings (for garnish)

Directions:
1) In a medium saucepan over medium-high heat, combine pudding mix, egg yolk, and chocolate milk. Whisk until completely combined. Bring to a boil, whisking constantly, and boil for 2 minutes. Remove from heat.
2) Add chopped chocolate and vanilla. Whisk until the chocolate is completely melted, about 5 minutes.
3) Spoon 1/2 cup of pudding into individual serving bowls. Cover the surface of the pudding with plastic wrap and chill thoroughly, about 2 hours. Top each pudding with whipped cream and chocolate shavings. Serve immediately.
