Peanut Butter Cup Ice Cream
The weather in Kingston is FINALLY taking a turn for the better. Today is a beautiful and sunny day so, in light of the approaching summer weather, I decided to share an ice cream recipe with you!
Now, my absolute favorite kind of ice cream would be something chocolatey with peanut butter swirled in, and perhaps some chunks of peanut butter cups or brownie bits. BUT, I'd have to say this is a close second!
You know how much I love peanut butter...it was only a matter of time before this got made!
Peanut Butter Cup Ice Cream
Prep Time: 25-35mins Chill Time: 2hrs Yields ~2 quarts
Ingredients:
1 1/8 cups good quality peanut butter (not natural)
3/4 cup granulated sugar
1 1/4 cup whole milk
2 cups heavy cream
1 1/2 tsps vanilla extract
1 cup mini peanut butter cups
Directions:
1) In a medium bowl combine peanut butter and sugar until smooth. Add the milk and slowly stir until sugar is dissolved, about 2 minutes. Stir in cream and vanilla and stir until completely combined.
2) Pour the peanut butter mixture into your ice cream maker and mix according to the manufacturer's instructions (approx 25-35mins).
3) Five minutes before the ice cream is done, add in the chopped peanut butter candies and let them mix in completely.
4) Transfer the ice cream into an airtight container and place in the freezer for at least 2 hours, or until ready to serve.
