Easy Bacon and Cheese Pull-Apart Biscuits


It's finally beginning to feel like spring/summer in Ontario and it's about time! Snow in March/early April is definitely NOT okay and I can't begin to describe how happy it makes me to have temperatures that are consistently above 0 C. I'm even happy to have rain if it means no more snow!



Lately, I've been attempting to be healthier in my diet, but sometimes you just want to make something that is so quick and easy and takes little to no effort to make. That is the exact definition of this recipe.

If you can cook some bacon and shred some cheese, you can make these biscuits.

And I know, they're really not healthy. But damn it all, if they are one delicious breakfast-heart attack!


Easy Bacon and Cheese Pull-Apart Biscuits
Bake Time: 15-20mins        Yields 8 biscuits

Ingredients:
2 Tbsps butter, melted
One roll refrigerated biscuit dough (8 biscuits)
6 thin slices fresh mozzarella cheese
1 cup cooked bacon, crumbled (6-8 strips)
1 cup cheddar cheese, shredded

Directions:
1) Preheat oven to 350F. Melt butter and coat the bottom and sides of a 9-inch cast iron skillet with it.
2) Unroll biscuits and cut them as per package instructions. Place them in the bottom of the skillet so that they completely line the bottom of the pan.
3) Top biscuits with slices of mozzarella, then bacon, and finally shredded cheddar.
4) Bake 15-20 minutes, until cheese is melted and biscuits are cooked through. Serve warm.
