Layered Spicy Bean Dip
There are some nights when the boyfriend and I will get home from school late in the evening, and neither one of us wants to make a huge dinner. We're both just in the mood for something quick and easy that doesn't require a lot of prep. And sometimes, that means making dip for dinner...
This dip is one of those recipes that just happened to turn into dinner for us. It didn't take a lot of effort and it was super tasty and delicious! It would be a great addition to a party or buffet and it doesn't require very many ingredients. Just layer them all up, bake it, and enjoy!

Layered Spicy Black Bean Dip
Prep Time: 10mins Yields: 8 appetizer servings (1-quart serving dish)
Ingredients:
1 (8oz) package cream cheese, softened
1 can refried beans, prepared as per directions on can
1 cup cheddar cheese, shredded
1/2 cup tomatoes, diced
1/3 cup green onions, sliced
Directions:
1) In a 1-quart serving dish, layer the cream cheese, refried beans, and cheese.
2) Bake at 400F for 5 minutes, just until cheese is melted on top.
3) Sprinkle remaining ingredients over top. Serve with tortilla chips.
