Jack and Coke Ribs


This post is going to be short and sweet. It's friday, and I'm ready to bring on the weekend!

I made these ribs last week, but not knowing how long they took to make, we didn't end up eating them until about 10:30pm.

Regardless of the time these take I would highly recommend them because they are SUPER DELICIOUS! We had guests over that night and they were gobbled up so quickly.



One the barbeque, don't they look amazing? The barbeque sauce is caramelizing on the ribs!!

Jack and Coke Ribs


1) Barbeque Dry Rub
Ingredients:
1/4 cup paprika
1 Tbsp garlic powder
1 Tbsp onion powder
1 Tbsp cumin
1 Tbsp coriander
1 Tbsp chili powder
2 Tbsps kosher salt
1 Tbsp black pepper
2 Tbsps brown sugar
1 Tbsp granulated sugar

Add all the spices together in a bowl and mix until completely combined. Store in an airtight container

2) Brine
Ingredients:
8 cups water
1/2 cup salt
1/4 cup brown sugar
1 Tbsp black peppercorns
1 bay leaf

Add all ingredients to a large bowl and whisk until salt is completely dissolved.

3) Ribs
Ingredients:
1 rack baby back ribs
1/4 cup of Barbeque Dry Rub (from above)

Directions:
1) In a large pan, add ribs and brine. Refrigerate for 3 hours.
2) Remove pan from fridge and pat dry with paper towels. Rub the ribs with the barbeque dry rub and wrap them in aluminum foil. Place them in the refrigerator for 1 hour.
3) Preheat oven to 250 F. Keep the ribs in aluminum foil and place them on a pan. Bake for 2 hours.

4) Barbeque Sauce
Ingredients:
1 cup onion, mined
2 cloves garlic, minced
1/2 tsp red pepper flakes
1 Tbsp butter
1 Tbsp olive oil
1/2 cup Jack Daniels
2 cups ketchup
2 Tbsps worcestershire sauce
1 cup coke
2 Tbsps brown sugar
1/2 tsp salt
1/2 tsp cayenne pepper
1/2 tsp Tobasco sauce
1 tsp ground mustard
salt and pepper, to taste

Directions:
1) In a medium sauce pan, add butter and oil. When butter is melted, add onions, garlics, and red pepper flakes. Cook about 3-4 minutes.
2) Remove from heat and add Jack Daniels, then return to heat. Cook until liquor is reduced, about 1-2 minutes.
3) Add remaining ingredients, stirring until completely combined. Turn down heat and let simmer for around 30 minutes.
4) Blend with an immersion blender or in a food processor/blender until a smooth consistency is reached.
5) When ribs are out of the oven, turn on your barbeque. Take the ribs out of the foil and grill on each side for about 7 minutes, slathering generous amounts of barbeque sauce on each side. Allow the sauce to caramelize on each side. Serve hot.
