Quiche Lorraine Scones


Fresh baked bread is one of those things that I could eat all the time. It never gets boring for me and you can always switch it up by topping it with different jams and spreads. The thing I don't like about fresh baked bread is how long it takes to make it.

For those of us starving students who DON'T have enough money to own a bread maker, we have to make it the old fashioned way. This can be fun SOMETIMES but it can also be a day-long process and has the potential to end badly. I've made a few yeast loaves, but I still haven't quite perfected it yet.


This is why I wanted to make some scones. I had never made scones before, but as soon as I discovered that no yeast was involved, I was on board. They still fall under the "bread" family, but are much easier to make. 

This recipe came about when the boyfriend requested something for breakfast. We were having a lazy day and hadn't made it to the grocery store. These were the perfect solution. 

Honestly, these scones were to die for. The smell while they were in the oven was enough to make your mouth water, and biting in to a scone fresh from the oven was like taking a bite of heaven. I would definitely recommend this recipe to anyone and everyone. These are the ultimate breakfast scone!

Quiche Lorraine Scones
Bake Time: 20mins        Yields 8 scones  
Ingredients:
2 cup + 1 tsp flour, divided
1 Tbsp baking powder
Pinch cayenne pepper
Dash nutmeg
1 tsp salt
1/2 cup butter, diced
1/2 cup homogenized milk
2 eggs
4 ounces swiss cheese, diced
3 green onions, sliced
6 strips bacon, cooked and crumbled
Egg wash (1 egg beaten with 1 tsp water)

Directions:
1) Preheat oven to 400 F. Line a baking sheet with parchment paper and set aside.
2) Prepare the cheese, green onions, and bacon. In a medium bowl, toss them together with 1 teaspoon of flour. Set aside.
3) In a large bowl, combine flour, baking powder, cayenne pepper, nutmeg, and salt. Using a pastry cutter, or two knives, cut in the butter until it forms small crumbled balls of pastry.
4) In a separate bowl, lightly beat the milk, and eggs and add it to the flour mixture. Add the cheese, onions, and bacon and stir with a wooden spoon until the mixture begins to come together.
5) Put the dough on a lightly floured surface and knead it lightly for about a minute. Form the dough into a large circle about an inch thick. Using a pizza cutter, cut the dough into 8 triangles. Arrange your scones on the baking sheet. Brush the top of each scone with egg wash. Bake for 20 minutes, or until golden brown.

  1. i usually eat sweet scones with some kind of fruit like blueberries. but, i like the sound of this savory scone with a crispy top! yum!
