Peanut Butter Chocolate Chip Squares


I don't know if anyone has noticed, but for the past couple weeks, I have been trying to post a new recipe on Monday, Wednesday, and Friday. As ambitious as it was for me to try and post a new recipe everyday, I have found that baking/cooking/blogging often gets put on the back burner while work, school, and life take precedence.


By giving myself a schedule of three posts a week, I can prepare to have recipes ready for every second day, as well as continue to bake/cook and save up recipes for the future. Sometimes life gets busy and there just isn't time to get adventurous in the kitchen, but this way, I'll always have something ready to post for you!

Today's recipe is a super rich, sweet square, that is almost like a variation on my family's Chocolate Chip Squares, except it is also loaded with peanut butter and peanut butter chips. They turned out incredibly soft, dense (I suggest cutting these squares pretty small!), and a perfect combination of chocolate and peanut butter!

Peanut Butter Chocolate Chip Squares
Bake: 16-20mins        Yields 32 squares
Ingredients:
1 1/2 cups flour
1/2 tsp basking soda
1/4 tsp salt
3/4 cup brown sugar, packed
3/4 cup creamy peanut butter
1/2 cup unsalted butter, at room temp
1/2 cup granulated sugar
1 egg
1 tsp vanilla
1 cup milk chocolate chips
1 cup peanut butter chips

Directions:
1) Preheat oven to 350 F. Grease a 9x13 inch pan, set aside.
2) In a small bowl, whisk together flour, baking soda, and salt. Set aside.
3) In a large mixer bowl, beat together brown sugar, peanut butter, butter, and sugar. Add egg, and vanilla and beat until creamy and smooth.
4) At a low mixer speed, add dry ingredients and beat until just combined. Fold in chocolate and peanut butter chips using a rubber spatula.
5) Press the dough into the bottom of your prepared pan. Bake for 16-20 minutes or until golden brown. Cool completely on a wire rack. Cut bars and store in an airtight container.
